Quick and Easy Vegetarian Avocado & Tomato Sandwich

I am obviously not the originator of this sandwich and I actually only caught onto how to make this sandwich by watching Tabitha Brown’s Instagram stories. If you’re not familiar with Tabitha Brown, people call her “America’s mom” but she’s much more than that. Her vegan recipes, lifestyle stories, and no-nonses wisdom is just what most people need to hear and see. She speaks to the world in a calm and kind voice as she delivers the stern facts about living life in happiness and to the fullest.

My friends had mentioned to me that she had a lot of TikTok videos. Since I am not on TikTok, I waited until she got an Instagram page. After I saw this quick recipe that I’m about to tell you about, I was hooked. She has a beautiful nurturing personality and it’s just so easy to connect with the message she stands for.

I have been entertaining the idea of veganism for a little while but vegetarianism just seemed to fit my current way of life. I’m always on the lookout for quick recipes that I can make in less than 20 minutes. I don’t really like to spend a huge amount of time in the kitchen. It is nice to find vegan recipes that I can adapt to my lifestyle. Maybe one day I’ll make the bold leap to veganism. For now, I wanted to share the recipe just in case you want to make a sandwich of your own.

Ingredients

Preparation

Put your slices of bread in the toaster, oven, or toaster-oven and toast to your liking.

Wash and slice the tomato in slices that are about 1/4 inch to 1/2 inch thick.

Cut your avocado in half and remove the pit. Then, gently remove each half of the avocado from the skin.

Slice the avocado into long 1/4 inch slices and set to the side.

Assembling the Sandwich

Remove your toast and spread on about one teaspoon of Veganaise or mayonnaise to each slice. I used Kraft avocado oil mayonnaise.

Sprinkle on a generous amount of garlic powder to each slice.

Sprinkle a little bit of Everything Bagel seasoning or other seasoning that you prefer.

Place some of your slices of avocado on both sides of the toast for a hearty sandwich. If you want a smaller sandwich, only put your ingredients on one side of the toast.

Line up a few slices of the tomato on top of the avocado. The tomato may be quite thick so you might not be able to get too many on the bread.

Put the two slices of bread loaded with ingredients together. You can add some slices of pickle on top of the tomato or just have the pickle on the side.

Now bite into your thick and juicy avocado and tomato sandwich and enjoy the flavors!

Final Thoughts

This whole recipe only took about ten minutes to make, was really inexpensive, and perfect to fill up my stomach.

You can adapt these ingredients to your liking. I’ve added green or red leaf lettuce to the bread and even added Morningstar Bacon Strips to make the sandwich into a BLT.

I was able to find all these ingredients at my local Walmart, so you don’t have to go out of your way to find anything. You can make this sandwich by finding a bread not made with dairy products/by-products and using Vegenaise or vegan mayonnaise.
